Once a Month cooking really works out well and it will save you money in the long run. The key is to use your own personal recipes instead of the unfamiliar ones in the books. Gradually add in more and more new recipes but never spend a day or two cooking meals only to find out your family doesn’t like it.
Start small maybe do one week or two weeks – don’t start with a month.
I modified it because feeding 7 and cooking for a month at once is too much food and work. This is how I modified the monthly meals.
Choose all your ground beef recipes (spaghetti, chili, tacos, meatloaf, sloppy Joes, etc.) then prepare them buying the ingredients in bulk. Brown the ground beef in bulk (5 pounds or so), add in onion for seasoning. Then separate out the meat that you just want to have onion in it. Place in containers or Ziploc bags and freeze.
Next add tomato sauce and the ingredients you would like for spaghetti, sloppy Joes, etc. You can add seasonings before freezing or afterwards. I prefer to wait until the final cooking thus the meat has a more flexible use and the seasoning taste is stronger when fresh.
With another 5 pounds of ground beef season and shape into meatloaves, depending on the size needed for your family, this could get you anywhere from five meals to one. Freeze in pan or freeze in a foil lined pan then when solidly frozen remove from pan and wrap well.
So in one afternoon you can easily get several ground beef meals prepared and frozen for your family. Then another day do chicken meals – chicken packets, chicken and dumplings, chicken pot pie, casseroles, precooked diced chicken, etc.
The key is to use the recipes your family enjoys so that you know the meals won’t be wasted and the familiarity makes the system easier.
